Fresh Garden Salad

A refreshing and colorful salad packed with vitamins and flavor, perfect as a side dish or light meal.
1. 6 cups of fresh of mixed greens
2. 1 cup of halved of cherry tomatoes
3. 1 medium, sliced of cucumber
4. 1/4 cup of thinly sliced of red onion
5. 1 medium, diced of bell pepper
6. 1 large, grated of carrot
7. 1 ripe, diced of avocado
8. 3 tablespoons of extra virgin of olive oil
9. 2 tablespoons of fresh of lemon juice
10. 1 teaspoon of of dijon mustard
11. 1 teaspoon of of honey
12. 1/2 teaspoon of of salt
13. 1/4 teaspoon of freshly ground of black pepper
1. In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, bell pepper, carrot, and avocado.
2. In a small bowl, whisk together olive oil, lemon juice, dijon mustard, honey, salt, and pepper to make the dressing.
3. Drizzle the dressing over the salad and toss gently to coat.
4. Serve immediately as a side dish or add protein of choice for a complete meal.
