Mediterranean Quinoa Salad

A refreshing and nutritious salad packed with Mediterranean flavors and protein-rich quinoa.
1. 1 cup of dry of quinoa
2. 2 cups of of water
3. 1 medium, diced of cucumber
4. 1 cup of halved of cherry tomatoes
5. 1/2 small, finely diced of red onion
6. 1/2 cup of pitted and halved of kalamata olives
7. 1/2 cup of crumbled of feta cheese
8. 1/4 cup of fresh chopped of parsley
9. 2 tablespoons of fresh chopped of mint leaves
10. 1/4 cup of extra virgin of olive oil
11. 3 tablespoons of fresh of lemon juice
12. 1 clove, minced of garlic
13. 1 teaspoon of of dijon mustard
14. 1 teaspoon of of dried oregano
15. 1/2 teaspoon of of salt
16. 1/4 teaspoon of freshly ground of black pepper
1. Rinse quinoa under cold water. In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed.
2. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and transfer to a large bowl to cool.
3. In a small bowl, whisk together olive oil, lemon juice, garlic, dijon mustard, oregano, salt, and pepper to make the dressing.
4. Once quinoa has cooled to room temperature, add cucumber, cherry tomatoes, red onion, olives, feta cheese, parsley, and mint.
5. Pour the dressing over the salad and toss gently to combine.
6. Refrigerate for at least 30 minutes before serving to allow flavors to meld.
7. Taste and adjust seasoning if needed before serving.
