Pancakes from Scratch

Fluffy, homemade pancakes perfect for a weekend breakfast or brunch.
1. 2 cups of of all-purpose flour
2. 3 tablespoons of granulated of sugar
3. 1 tablespoon of of baking powder
4. 1/2 teaspoon of of baking soda
5. 1/2 teaspoon of of salt
6. 2 cups of of milk
7. 2 large, lightly beaten of eggs
8. 1/4 cup (4 tablespoons) of melted of unsalted butter
9. 1 teaspoon of pure of vanilla extract
10. for greasing the pan of cooking spray
11. for serving of maple syrup
12. for serving (optional) of fresh berries
1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
2. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
3. Pour the wet ingredients into the dry ingredients and stir just until combined. Don't overmix; a few lumps are okay.
4. Let the batter rest for 5-10 minutes.
5. Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray.
6. For each pancake, pour about 1/4 cup of batter onto the hot griddle.
7. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
8. Flip and cook until the second side is golden brown, about 1-2 minutes more.
9. Transfer to a warm plate. Repeat with remaining batter.
10. Serve warm with maple syrup and fresh berries if desired.
